My Holiday Breakfast Favorite: Smoked Salmon Bagel with Pouched Eggs

Oh I love pouched eggs! Eggs Benedict are another favorite of mine and I always order them when we dine out for breakfast. Poaching? Sounds difficult? It is actually very simple and something you can impress your family! Well beside my boyfriend. He does not eat any eggs unless they are in a cake and not longer visible as egg. Well he is working so I decide to start my thanksgiving with my salmon bagels and add some pouched eggs in top. Holidays are there to indulge, right? And this is also a very healthy dish with a lot of good ingredients.

For one bagel you need the following:

  • 1 Bagel (I like sesame but you should choose what you like)
  • 1/2 Package Smocked Salmon (1.5 oz)
  • 2 Eggs
  • 2 Tbsp. Vinegar
  • 1/4 small white onion, sliced
  • 2 Tsp. Sour Cream
  • 2 Tsp. Capers
  • Salt
  • Pepper
  • Fresh Chives

I start with toasting the bagel halves to be golden brown on all sides. In the meanwhile I get the smoked salmon out of the fridge and yeah there is a lot of difference between smoked salmon. I like Alaskan Sockeye Smoked Salmon but it will be depending on what you get. Salmon is a very fatty but super healthy fish. We will talk later about some other nice smoked salmon recipes.

Smear the bagel halves with the sour cream and sprinkle with capers and sliced onion. Arrange the salmon on top.

Crack the eggs open and in separate little bowls. Make sure the egg yolk is not destroyed and very firm. The eggs need to be fresh since they will be eaten undercooked and runny.

In a medium size pot get the water to a boil and add the vinegar. Yes the vinegar needs to go in the water. This makes the poaching so simple. Then use a fork and start stirring counterclockwise to create a water swirl. Careful let the egg, one at a time, drop in the water and keep swirling. The water should not bubble boil during this process. After 3 min the poaching is done. That’s how I like them. Runny egg yolk and hard white. Take them out and set on a paper towel to drain all water. Immediately serve on the bagels. Pepper, salt and sprinkle cut chives for some fresh taste on top. Enjoy!
