Chocolicous or death by chocolate

Ok I want to write about healthy dishes but healthy does not mean that you have to count calories for the rest of your live. Once in a while you have to indulge yourself and eat what you like. I think as long as you know what you eat you should not feel guilty. And to be honest chocolate can also be very healthy. If you want to impress on a date or your family then try this delicious dessert!

For choco lovers…

To surprise 4 people:

  • 5 oz or 150 g dark Chocolate, Lindt 75% or chocolate chips
  • 1/4 cup or 50 g Butter
  • 4 Eggs
  • 1/4 Tsp. Salt
  • 1/3 cups or 75 g Sugar
  • 4 Tbsp. Flour
  • 1 Tsp. Vanilla extract
  • A bit more butter for the ceramics
  • 1 Tbsp. Powder sugar for decoration

Melt the chocolate in a water bath or careful in the microwave. I always make sure to not overheat it since taste, consistency and shine will change. Add the butter and let melt too.

Get four oven ceramics (Creme brûlée dishes) and butter the inside. Heat up the oven to 425 F / 220 C.

Combine in a mixing bowl the four eggs and the sugar and mix till it slightly changes to a lighter yellow color. Mix in slowly the cooled down chocolate butter and add salt and vanilla. Combine slowly with the flour and add to the ceramics. I like to have my batter chilled for 10 min or so before I place it into the oven. Bake the batter for exactly 10 min to create the liquid middle core you want. Bake longer to have a delicious chocolate cake.

Now you can serve this dish either with a nice fruit sauce or homemade vanilla ice cream. I like a combination of both or just vanilla ice cream and fresh fruits like raspberries, blackberries or mango.

 

For the raspberry sauce:

  • 500 g fresh raspberries
  • 50 g Sugar
  • 1 Tsp. Corn starch
  • 1 Tsp. Vanilla extract

Combine raspberries, sugar and vanilla in a pot and let it simmer in medium heat for 5 min. I like to strain my sauce with a sieve of o get all kernels out and have a smooth sauce. When this is done I bring the smooth sauce back to a boil and as the corn starch dissolved in a little liquid. Usually I just take a shoot glass, add some water and the powder and pour this into the hot fruit sauce. Let it cool for a few minutes till it thickens up. If you want you could add some alcohol for the special kick. I would recommend something like a raspberry Schnaps or a Cointreau.

 

For a fruity mango sauce:

Blend a fresh sweet mango with a bit powder sugar till it is smooth.
