Yeah this is a copycat recipe which took me not to long got make delicious.
Many years ago when I still lived in Germany I came for a packaging tradeshow to Anaheim (yes where Disneyland is…) and we had our first evening dinner at Ruth’s Chris. Not that they haven really good steaks, they also had this delicious sweet potatoes casserole.
Since we do not have that kind of steakhouse I had no other choice than to start experimenting to create my casserole… and yes it is heavy but turned out very good 😊
Sweet Potato Casserole (Ruth’s Criss Copycat)
The perfect steak and prime rib pairing. This sweet delight is not super healthy but its comfort soul food! Some green beans or brussels sprouts pair well with it too.
Filling:
- 3 cups of sweet potato cut in small cubes
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 2 Eggs large
- 1/2 cup or 1 stick butter (melted)
- 1 Tsp salt
- 1 Tsp vanilla paste or extract
Topping:
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1/3 cup flour
- 1 cup chopped pecans or walnuts
- 1/2 Tsp. Salt + salt for water
- 1/4 cup 1/2 half stick butter unsalted melted
- Cook the sweet potatoes for approx. 20 min in saltwater till soft, train and let cool down.
- Meanwhile combine topping ingredients and hand crumble them together.
- Preheat the oven to 350F/ 175C.
- Beat the eggs till they get a white color, add sugar, salt, vanilla paste and beat some more. Combine with the sweet potatoes and the melted butter.
- Pour the sweet potato filling in a pie dish and top with the pecan crumbles. Bake for 30 min and let cool down a bit before serving.
It is a delicious side dish to prime rib, steaks or for thanksgiving to a turkey.
